Spice markets are entering the final quarter of 2026 in an unusual state: spot prices are steady almost everywhere, but the risks underneath them are building. Here is what buyers and sellers of garlic and ginger should know.
Garlic: stable FOB prices across origins
Fresh and dehydrated garlic prices are holding flat week-on-week across the three key export references:
| Product | Origin | Terms | Latest price |
|---|---|---|---|
| Fresh garlic | Egypt | FOB Cairo | ≈ EUR 1.05/kg |
| Garlic powder, organic | India | FOB New Delhi | ≈ EUR 6.57/kg |
| Garlic powder, organic | Vietnam | FOB Hanoi | ≈ EUR 4.63/kg |
Firm global demand for dehydrated garlic and hot, humid weather in key producing regions are keeping downside limited — but there is no immediate catalyst for a sharp rally either.
The risk: India's monsoon
A deficient monsoon and persistent heat in North India are raising concerns for the upcoming bulb and seed-garlic crop. Current stocks cushion the near term, but weather between now and planting will shape 2027 origination costs. Egypt sits between export seasons with no immediate disruption, and Vietnam remains a steady niche supplier into regional powder routes.
Ginger: China dominates, Nigeria still recovering
- China leads global supply at roughly 6 million MT, with India second at ~2 million MT
- Nigeria is recovering from blight but produces only 20–30% of pre-blight levels
- Indian production fell 12% on reduced planted area, and about 90% is consumed domestically
- 85–90% of exports move fresh, mostly from China; drying is becoming less attractive as fresh prices rise
- Indian dry ginger exports more than doubled in 2025, with ~80% of exports heading to Bangladesh
What to do with this
For buyers: nearby coverage is reasonably priced — but forward contracts for Q1 2027 Indian garlic look increasingly prudent given the monsoon shortfall. For sellers: steady prices and firm trade flows mean well-graded, export-ready lots are moving without discounting. Quality documentation (certificates, moisture specs) is what separates offers in a flat market.
